Our Story

The idea for Hatch Chili Grill came together in 2013 when owner John Smith decided to put his restaurant chops to the test, featuring a star chile that is as special as it is delicious.

Having grown up in New Mexico, the vision was both exciting and close-to-home. Each chile used at the restaurant is sourced directly from the Hatch Valley, giving each dish a certain authenticity that's hard to beat.
